Champagne Guiborat, Cramant
I say this every year—Champagne Guiborat is one of the most sought-after producers in Champagne today. Their tiny production means word doesn’t spread far and wide, but I remain hopeful that we Australians will cotton on to just how good these wines are. With only 150 bottles of each cuvée, there’s not a lot to go around. However, unlike anywhere else in the world, these bottles are offered with no restrictions—until they’re sold out.
A true family affair, Richard and Karine Fouquet are based in Cramant, in the Côte des Blancs, where they farm 8 hectares in total, selling most of it to Laurent-Perrier while keeping just 3 hectares of their best vineyards for their own production. These prized parcels are located in the Grand Cru villages of Cramant, Chouilly, and Oiry, along with a Premier Cru Pinot Meunier vineyard in Mardeuil. Their farming is organic and meticulous, with an above-average amount of time spent per vine.
In the cellar, winemaking is obsessively precise, favouring stainless steel tanks and any approach that enhances the minerality of their terroir.
The Téthys, while their entry-level cuvée, is anything but a novice. It’s made from younger vines or the taille (second press) of older vines and undergoes malolactic fermentation, bringing a softer, more approachable edge.
By contrast, the Prisme comes from their most prized old vines, using only the heart of the press. In pursuit of purity, they avoid malolactic fermentation, resulting in a Champagne that is mineral-driven, almost aggressively so.
At a fraction of the price of more famous Blanc de Blancs producers available in Australia—yet with even more street cred 'en Paris'—this is a grower Champagne that deserves your attention.

NV Champagne Guiborat Tethys.21 Grand Cru Blanc de Blancs
Sourced from four parcels in Cramant, Chouilly and Oiry planted between 1969 and 2011, the NV Blanc de Blancs Téthys.21, based on the 2021 vintage and complemented by 35% reserve wines from 2018-2020, was disgorged in December 2023 with a dosage of 1.5 grams per liter. Unfurling from the glass with aromas of pear, dried white flowers and pastries, it is ample and charming, with vibrant acidity and a sapid finish. This blanc de blancs is made from juices from the end of pressing of the fruit that inform Prisme and De Caurés à Montaigu, blended with the “cuvee” from the estate’s youngest parcels. Vinified for seven months on the lees in stainless steel, it is the only wine in the range that undergoes malolactic fermentation, producing a Champagne with the most immediate personality.

NV Champagne Guiborat Prisme.19 Grand Cru Blanc de Blancs
Guiborat’s NV Blanc de Blancs Prisme.19, sourced from Les Caurés and Les Mont Aigu in Chouilly (planted between 1946 and 1998) and Bergeries in Cramant (planted in 1984), is based on the concentrated 2019 vintage, with 17% reserve wines from 2018. Without malolactic fermentation and matured on the lees for seven months in stainless steel, it was disgorged in November 2023 with 2.5 grams per liter dosage. Soaring from the glass with scents of fresh citrus fruit, hazelnuts and oyster shell, it is chiseled and precise, making it the most tightly wound wine in the range. Concentrated yet racy-fresh, based on great terroir and good farming, it is structured around chalky extract and electric acidity, concluding with a long, mineral finish. It is the most precise rendition of this cuvée since the 2016 base and comes warmly recommended.
