Maxime is from a long line of vignerons and wine merchants. In 2016 he started to produce his own wine from vineyards inherited from his family.
He had a different mindset and wanted to create wines with minimal winemaking artefact to embrace Volnay’s delicate, fine and perfumed wines. This is gained from minimal intervention yet the wines drink ever so classical, just more vibrant and expressive than many.
The fruit spends 25 days on skins then matures in seasoned wood with an age of 1, 2 and 3 years old. He uses 20% whole bunch.
