From this producer comes classic smokey and mineral Pouilly-Fumé! Run by Alain Pabiot and his son Jerome, the domaine dates back to 1880. Based in the village of 'Les Loges' it covers 29 hectares in Pouilly-Fumé across five communes with 30 separate parcels. Varying terroirs - caillottes (the white limestone pebbles the domaine is named for), Kimmeridgian marl, clay-limestone and silex - combine to give complex and nuanced wines displaying the epitome of Pouilly-Fumé characteristics.

Sustainable viticulture is practiced, with the estate certified Terra Vitis and High Environmental Value. The grapes are hand harvested and quickly taken to the winery. Fermentation begins spontaneously with natural yeasts, all parcels are vinified separately and blended prior to bottling, and the wine spends at least four months on its fine lees. The 2025 Domaine des Fines Caillottes has already been awarded gold medals at both the Concours Général Agricole de Paris 2026 and the Concours Féminalise 2026.
